Baptised thus in hommage to the famous monk of Hautvillers Abbey, these champagnes have always surpassed excellence and have sometimes reached perfection. Every Dom Pérignon vintage is unique.

A family winery is over 140 years old.

The winery began working in champagne since 1874. They produce champagne with the grapes of the vines class first cru of the Montagne de Reims. 10 years minimum for aging vintage champagne.

 

Avenay Val d’or

CHAMPAGNE YVES RUFFIN

Family winery created in 1970.

They have 3 hectares of vines are located in the first vintage villages of Avenay Val D'or and Tauxières in the Marne. The vines were planted at 60% Pinot noir and 40% Chardonnay. They praptiquenet the Organic Cuture since 1971 (certification ECOCERT). Their vines are between 45 years for the oldest and 5 years for the youngest. They work their soil mechanically (discs, claws and plows), and fertilization is only based on compost. The harvest mostly in mid-September and picking is done manually. Vinification is done only in barrels and oak or acacia lightning. According to the years the breeding of their wines takes 6 - 8 months. Once bottled their champagne will, after the birth of the bubbles, evolve slowly and serenely in the darkness of our cellars, for a minimum duration of 3 years. They voluntarily practice a fable dosage, between 2 and 6 grams per liter, in order to enhance the finesse of their champagne.
